Khmer Curry Carrot Soup

Jean-François Plante's recipe

Ingredients:

1 pound carrots, sliced (approximately 5 large Nantes carrots)

1 apple

1 litre chicken stock

½ teaspoon La Plantation young ginger

1 tablespoon La Plantation red curry

½ teaspoon La Plantation pepper and spices blend (extra for garnish)

2 tablespoons Sous les oliviers extra virgin olive oil

Instructions:

Coat the bottom of a saucepan with olive oil.

Add chopped carrots and apple, leave covered and sweat for 10 minutes. Stir occasionally.

Add chicken stock and spices. Bring to a boil until carrots are tender.

Transfer the mixture to a blender or food processor. Blend until smooth.

Garnish to taste with La Plantation pepper and spices blend. Enjoy!
